Ecu can't control engine

I recently purchased a 89 gt. I had to assemble the motor and had professional help doing that. After the i hit 1000mi break in mark, i started to let the rip on the motor. The motor concest of a stock block, bored to 306. New balanced crank and wexco pistons and I&I rods?.Svo main cap gertal. Arp bolts.Ederblock performer 2.02 heads, x303 cam.1.6 ratio Energier. full roller rockers.Gt-40 upper and lower intake. bbk 70mm throttle body and egr spacer. pro-m 70mm mass air, and calibrated to the 24# injectors and a kenne belle ram air. for somereason the ecu started retarded the timeing and had to move to dist. more advanced to keep the car running. The ecu won't keep the motor at a constant time. Its jumps between 12 dg. and 20 or 22dg. Me full pressure is at 38psi on idle and 42psi when on the gas. I have a very strong torg to get out of the hole but have really no mid range top end out of the motor. Power is move to the tremec tranny through a king cobra clutch the to 373 in rear to 16" pony's. My freind at that works at ford said the the ecu is to dump for the computer so. i have looked in to the SpeedBrain. but have read alot of negative comments on the unit. So I'm Looking at the ecc-tuner. but it sounds like it is rather difficult to set up properly. I you could help out on what is the best solution for my problem. and is the ecc-tuner managable to a personal that is patatient and willing to set down and work on something untell it is done and done right.
